Ingredients

1–2 tbsp olive oil or ghee
1 lb mild ground turkey (or ground italian sausage)
1 medium onion, diced
3–4 garlic cloves, minced
1 tsp dried oregano
½ tsp dried thyme
¼–½ tsp red pepper flakes (optional)
3 cups chicken bone broth
1 can (14–15 oz) crushed or fire-roasted tomatoes
2 cans (14–15 oz) cannellini beans, rinsed
1 small bunch kale, stems removed, chopped
Sea salt & black pepper, to taste
To serve: grated Parmesan, drizzle of olive oil
Instructions
Heat the oil in a large pot over medium-high heat. Brown the turkey with the onions, garlic, red pepper flakes, and black pepper until the turkey is cooked through and the onions are translucent,
Add oregano, basil, can of tomatoes (with liquid), and beans. Stir to combine.
Reduce heat to medium-low, add kale and cover for about 2 minutes or until kale softens. Stir to combine.
Add broth, stir, and increase heat to medium. Continue to cook until soup comes to a simmer and is heated through, about 5 minutes.
Remove from heat, stir in Parmesan and serve!
